One week sample menu by Laurianne HABERSTICH
Laurianne recently did an internship at La Butte restaurant, a Michelin and green-starred restaurant by Nicolas Conraux. Her meeting with Nicolas has evolved her way of cooking. He taught her how to use miso, shio koji, amazaké, sea salt, probiotics to bring more flavors and move towards healthy food.
It is with this inspiration and in collaboration with Nicolas that she offers this menu.
DAY 1
LUNCH
Welcoming buffet at the marina, with the amazing view of Palma de Mallorca’s Cathedral.
Tapas: jamon iberico, pan con tomate : grated garlic and tomatoes on toasted bread, goat cheese, hummus, dips
Salmon tartare with homemade fermented almond yogurt and veggies, olive and feta cake.
Local fruits crumble and a matching scoop of ice cream.
DINNER
Zucchini soup with poached egg, salted granola and dried miso tomatoes
Monkfish with sobrasada crumble (local delis) and oat milk foam, mashed sweet potatoes and kimchi vegetables

Italian tuna carpaccio, lemon, olive oil, capers and basil,
Prawns and potato salad, avocados, eggs, lacto-fermented radishes

Ile flottante - drinking custard topped with meringue and caramel drizzle

Prawns with guacamole and broccoli salad, chia seeds tile
Baked sea bream with fennel and lemon, mashed potatoes
Tarte Tropézienne - brioche filled with fresh strawberries and whipped cream

The local aperitif is Sangria, which can be made with sparkling Cava wine
Aperol spritz, mojitos, strawberries mojitos, daiquiri, gin tonic…
BREAKFASTS
French toasts, pancakes, homemade baked croissants and brioches, oat and almond granola with miso
Homemade dried apples, energy balls with dates and oats, avocados eggs toasts,
ham, cheese, smoked salmon, homemade almond milk yogurts, fried, soft boiled or scrambled eggs
Fresh fruits salad, freshly squeezed Majorcan orange juice, coffees, milk foam, teas…
With the preference list filled out, Laurianne will be able to take into account your tastes, expectations or restrictions.
To offer you high-quality meals, she will select, local, organic, and seasonal products, from suppliers and producers.
ARMEN is offering 4 ensuite cabins:
1 MASTER cabin equipped with a Queen size bed (2,00m x 1,60m)
3 DOUBLE cabins equipped with a Queen size bed (2,00m x 1,60m)
Ceiling height of the 4 foreward cabins is: 2,10 - For the aftboard cabin it's: 1,98.
All cabins are offering air conditioning control, Mechanical ventilation, plugs, hair dryer & toiletries.
The Master cabin is also equipped with a TV, a large sofa and a safe;
The crew cabin is located amidships on the port side.

To our fabulous Chef Lauriane – Thank you for all the beautiful meals! The flavors and combinations were simply fantastic. Better than any restaurants!!! We so appreciated all you have you put into the food you make.
To our lovely Stewardess Thalia – Thank you for all your efforts to make us comfortable at all times. For the coffees, teas, wines, and of course, the chocolates.
And the beautiful table settings, flowers and more that show just how you much you care are so appreciated.

Wow! What a fantastic and magic week we all had!.
Firstly the boat was beautiful and impeccably laid out. So comfortable and welcoming for all of us.
We loved that it was brand new. From the moment we stepped on board, it was clear that you had nothing but our comfort and best interests in mind.
Louis, it was clear that you were always thinking about where to avoid the swells and capture the best sailing, the best, and the bluest waters.
All of the places we stopped to swim and sleep were magical even though you aren’t Spanish, it sure seemed like you had been her a lot!
Thanks to the whole team for all the wonderful drinks, snacks and meals.
We never felt hungry or thirsty thanks to you!
Also grateful to you for remembering everyone’s preferences on food. You even learned to make an espresso martini for me and nailed it.
And the small harbor run for Cointreau was much appreciated! We will not forget the cocktails, the healthy breakfasts. Also loved trying out the jet surfboard and hope to master it or another trip!
Thanks for being patient with us, always keeping smiles on your faces, and doing your jobs and doing your jobs with passion, humility, humor and total professionalism!
Including diving for things we dropped in the ocean and playing along with the “watters shots”.

Après huit jours de vadrouille passés à bord du ARMEN et sans avoir touché terre, nous pouvons dire que la déconnection avec les terriens a été totale.
Le capitaine a su nous faire découvrir les plus beaux paysages de Mallorca, les repas et collations très variées et d’excellente qualité, la discrétion de l’équipage était également au rendez-vous sans pour autant jamais oublier de nous proposer un rafraichissement ou un petit grignotage.
Nous en profitons également pour observer le parfait état du bateau, très bien conçu, décoré pratique et très confortable.

After eight days of sailing aboard the ARMEN without setting foot on land, we can say that we were completely disconnected from the mainland.
The captain showed us the most beautiful landscapes of Mallorca, the meals and snacks were varied and of excellent quality, and the crew was discreet without ever forgetting to offer us refreshments or snacks.
We also took the opportunity to observe the perfect condition of the boat, which was very well designed, practically decorated and very comfortable.
